Chicken Curry!

  • I love cooking and creating new recipes. I believe that if Sam can cook, anyone can cook, just needs to be creative. (That Sam cooking part was a joke, he is a great cook). There are so many ways of preparing chicken. Below is one of the ways of making chicken curry.
  • Ingredients: chicken drumsticks, onion, garlic, ginger, tomatoes (fresh of canned), yogurt, curry power, cumin seed or powder, cloves, bay leaves, coriander seed mix (can find in winco), cardamom (sukmel), salt for taste, chili paste. (If you are unfamiliar with any of those ingredients or you don’t have it, you can replace them with something else or just don’t worry about it.)
  • (For 8 chicken drumsticks: Onion can be 2-3, Sam loves onions, so I usually put 4 onions. three to four cloves of garlic, small portion of fresh ginger, 3 big tomatoes)
  • 1. Remove skin from chicken drumstick and make small cuts in the chicken.
  • 2. Rinse with cold water, but do not soak the chicken in water.
  • 3. Chop onion, garlic and ginger.
  • 4. Heat oil in a pan and add chopped onion, garlic, ginger, 1 tea spoon cumin seed and ½ tea spoon coriander seed. Fry them for 5 mins in medium heat.
  • 5. Now add: little salt, 1 tea spoon curry power, 5 bay leaves, chili paste, 5 cardamom, and 5 cloves. Heat for another 3 mins.
  • 6. Don’t forget to stir from time to time.
  • 7. Now add Chicken drumstick and in a medium heat keep it for 10 mins. Add salt and cover the chicken curry. Salt should help release water from chicken.
  • 8. Now add little yogurt and heat it for another 5 mins.
  • 9. If it is dry, you can add little water and heat it.
  • 10. Now add chopped tomatoes (fresh or canned) and heat it for another 5 mins.
  • 11. When the meat tends to fall apart from bone then you know it is ready to be served.
  • 12. Garnish with green coriander and serve it with rice.
  • 13. Enjoy.
